Balcony gardening in Vegas question

I'm a newbie to both gardening and to the site. I started a balcony garden at the house I'm renting in Las Vegas and wanted to get some advice.

So far, I've got: two tubs of grass, a pot of hibiscus, an urn of jasmine, one tub of sunflowers, a small pot of catnip, and pots of mint, lavender, and rosemary. Everything is doing well, other than the lavender (which is a subject for a different forum). I was going for three tubs of sunflowers, but my adventures with the sunflowers have been mostly futile.

My question is, what have other balcony gardeners in Las Vegas grown with success? What else could I plant without worrying about being killed by the extreme heat? Is it too late in the season to plant anything else? If that's not picky enough, anything I grow must be safe for cats, as I have two cats that love to nibble on green things. :)

Any tips/suggestions are welcome!
