mounding around stems

I plan on using Lasagna Gardening this year at my elementary school. I plan on laying a newspaper base and laying on bags of leaves and grass clipping from the city gardener.

My concern is adding material while the plants are growing. I know I can get away with it with tomatoes, potatoes and corn.

What other vegetables and flowers will not suffer from having compost added around their stems?

Squash and cucubrits can also tolerate it; in fact, mounding is recommended in areas with Squash Vine Borer issues. Peppers and eggplants also tolerate it. For the rest, as long as you leave a few inches around each plant, you can still fill between and simply flatten that square out after harvest is done.

Well put, you can top dress any thing as long as you aren't going right up to the stem.
