Need instructions on how to create a topiary lantana

I've got some lantanas I planted last year that are still in dormancy--four of them and they're kind-of-growing willy-nilly. But I would love to create a topiary (just the strait trunk upshoot with a ball at the top). Can I just call all the stalks off at the ground that are the weakest, and then tie a string to the strong one that is left to keep it upright? Should I plant it in a planter now or after it starts growing well (they are now in the ground). Also, once I get it going, how do I trim it to the shape of a ball?
