Does anyone grow asparagus for the foliage?

marti8aAugust 10, 2011

There are two volunteer clumps of asparagus in my yard, both along the fence line in really inconvenient places, and I noticed the other day that they are both still alive! That's with no water at all this summer. I'm thinking of harvesting the seeds and planting them against the wall in my flower bed. I can cut the shoots until the plants in the foreground get big and then let them go to be backdrop. Would that work or would letting them go ruin them as a food crop the next year?

As I understand it, asparagus cannot be harvested the first 2 years, can be aggressive, and is used as a ornamental where people have the room.

I planted some years ago for the foliage.
It's still a small clump and each spring I break off the spears as they come up and eat them raw.

I grow mine in a 30 + gal. pot because I don't have room for it to "expand". The foliage is nice as a texture change.
I also grow fennel and dill for the foliage to feed the butterfly wormies.

I have a very healthy clump that dies back in winter and returns every spring. I do not harvest it to cook but occasionally eat a raw spear like ruthz does. I did not plant it. It just volunteered from another plant that I long ago got rid of.

It gets almost 4 feet tall and then cascades down in a circle. I do not give it any special care, just a few squirts of water sometimes.
