busylizzy(z5 PA)Updated I blacken mine on the grill with a smoker box. Have always used a brown paper bag for sweating. I ask for paper bags at the grocery store for this purpose.

CA Kate z9Updated Here is a simple recipe that I make every couple of years. One thing I've found, use either red or green jalapenos, but not both.... you get a yucky brownish color if the colors are mixed.... but, maybe that doesn't matter to you....
