Hello KX and welcome to the forum - that's a good looking DR you have there. My little trees have always responded well to pruning (see "Pruning my tall DR" posted earlier this year), but keep in mind that, from what I can see in your picture, you have a grafted DR there and it would be a shame to lop off the grafted section that will eventually produce some beautiful flowers, perhaps this year. Hi there and here's another welcome from me this time!! That's a good looking plant you have found with a nicely developing caudex.
From the comparison to the poly-cup in the pic, I would estimate it to be over a foot tall? To get this to now grow 'in a short and stubby bonsai style' may prove difficult....in my opinion. You will not be able to cut back into the swollen part (caudex) and expect it to branch out as new branches only grow from old leaf scars. Can I suggest you do go for developing the branches to get a more of a bushy head to it? You can get this to happen by pinching out the soft tips of each branch to encourage new shoots to form from the leaf joints (nodes).
What type of mix is it growing in? It needs a very fast draining mix with lots of grit and no peat. A search on here will give you pointers for that.
This is just what I would do you understand, so is only a suggestion. In the meantime, I would keep a close eye on that Lowes store and grab another plant (or 2) with a shorter caudex and lower branches that would be more suited to growing in that 'short and stubby' bonsai style that you seek.
