How did my singe change to a double?

Hi to all! I am fairly new to the forum and finally decided to join after so many of my questions were answered here. I've learned so much from you all and hope you can answer this question for me...

I was watering my AVs the other day and realized that my 5-petaled violets had changed to doubles!!! There are 3 plants in one basket that changed literally almost overnight (or at least since I last watered). On each plant, there are some single and some double flowers. I have numerous AVs in the house, but they all came from a single plant given to me about 8 years ago. I recently moved the basket out of a bright south-west facing window into a window with filtered light so I'm wondering if that's what caused the change? I'd love to reproduce it again if I could, (they are so pretty!), but have no idea how it happened. Is this common? If I root leaves from this plant will they grow to be doubles?
