when to start cutting?

I am BRAND new to growing AV's. I bought a pretty little plant at a flea market and have fell in love with it. As it turns out, it looks like the AV was allowed to "grow" a sucker. It looks like there are 2 plants growing in the same pot...one in each direction. I have tried to look down into the stems to see if the slightly smaller plant has a starting place that I can tell where it grew out from the main plant. I can see none. Both plants are flowering and blooming. What I would like to do is take cuttings from the smaller plant and try to grow a new one and make it more symmetrical. But I do not want to do anything to "hurt" it. I have considered removing the smaller plant and giving the larger one room to grow more symmetrically, but I am worried I will end up killing them both. IF I attempt to do any of this should I wait until the plant is no longer blooming? Is there a time that is better to attempt this than another?
