How do I re-start wick action?

I've had my plants wicked for over a week now and they all seem quite happy.
I've read, however, that once in a while it is good to let the water in the container dry up so you can give the plants a break from damp feet.

With the way my plants have been behaving in the past and given the cold season is approaching - with less water needs and more risk for powdery mildew and the like, I think this would be a good idea.

My question is: when I water again, how do I do it to make sure the wick inside the pot gets uniformly wet again?
I could, of course, water really well but I am afraid I would over-water the AV-s at that moment by getting them from desert to swamp.

How do people re-start wick action properly when they let the container dry up once in a while?
