Or, get some turkeys or hogs - they'll root out the tubers and eventually eat it out of existence.
Seems difficult to believe, but folks intentionally plant yellow nutsedge - chufa - as a food source for wild turkeys, and 'back in the day', it was widely planted as a food source for hogs.
The tubers are pretty tasty - sweet, and somewhat reminiscent of coconut, to me.

I sure wish the armadillos would use nut grass for a source of food.

About 25 years ago I sprayed the garden with Round-up. After the nutgrass died, I plowed and raked up all the nuts. I let the remaining nuts sprout and sprayed again, let the grass die, plowed and raked, again. Then I covered the garden area with black plastic and let it sit for the summer. This helped but 25 years later all the nutgrass is back. It's like kudzu, there is not a cure for it.

There are chemical controls, but I can't attest to how effective they are - or how expensive, for that matter.
