Can we eat this sprouted yellow onion? See picture

My five year old son and I were grocery shopping and saw one big yellow onion that had sprouted a tiny bit. We took it home and let it grow. Now it looks like the picture below. Question: Can I slice up the greens part of this onion and use like a green onion in cooking? Will it taste just fine? Thank you!!

I have done it before. Put them on my baked potatoes. When I didn't have chives that is.
