Harvested too early-now what?

Hello everyone,

Garlic newbie here.

I planted 3 varieties of garlic on 11/01/09. When looked for harvesting cues online (not here), it said "when the leaves begin to turn brown and droop, it's time."

I harvested all 40 heads. Only they weren't heads! They look exactly like leeks--no cloves.

I know realize, after searching your forum, that another cue is scapes.

Goodness, I would have thought that 6 months in the ground would be long enough. They never went dormant this winter.

Live and learn.

Now I have 40 beautiful green garlics. Any suggestions as to what I can do with them. Maybe drying? Pickling? Can they held in the same way fully mature garlic heads are held? They still have their outer skins.
