Shallots bolted... Will they still divide?

I've grown some red shallots from saved sets for 3 years with no problems but the saved sets that I planted last fall (mid November) weren't watered much for the two months I was gone (December, January) which left the plants in real bad shape, when I got back. Most of them, then, bolted this spring. The warm dry winter probably didn't help either. Plus, the extreme temperature fluctuations this spring caused some of the smaller bulbs to shut off and go dormant, which I'm curing right now.

So, will the bolted plants divide any more or is it the end of the line for them? (meaning I'd have to cook em' all up and buy new sets) I did snap the sweet tasting scapes off early and cooked them in spaghetti.
