My seed-sown shallots often produce flowering stalks, or at least they try to. I pinch them off and then the plants proceed to splay out into divisions, which keep growing for several weeks. Until the green tops are dying back, I let them do their thing.

Thanks for the reply. I've seen them divide from little bulbs when first planted and taken good care of, but since they've been so stressed and then bolted, I didn't know what to do or expect. Most of the bolted shallots are still doing good, growing a lot of leaves... Some of the broken off scapes even shriveled up as if they were never there, which surprised me. I'll wait until they are truly ready to harvest, like you said...

We've had some weird weather in the last few months, high 90s last week and a couple of the bolted plants went dormant. All they had left were the big broken scape stalks so I pulled them. I may do an experiment and cure/hold those two instead of eating for as long as I can. Then, replant them before they rot and see what they do.
