egyptian onion questions

I am growing egyptian onions for the first time and they are looking great. They have formed small bulbils and are sending off other "tendrils". The bulbils are small and green and white. Some are sending shoots from the tops. My question is, how should the bulbils look when they are ready to pick? I'd like to try some but I'm not sure when to pick them. I planted them from Richters last year. I was able to split them when I got them and it looks like I could divide the base of each a number of times again when that time comes.
