Georgia Sweet onions going to seed already!

I bought a bunch of onion transplants and planted them a couple of months ago. Most of them aren't very big so far, but one is a lot bigger and is going to seed, starting to form the stalk and flower. Should I cut this off? Harvest the onion? Will bolting hurt onions?

If I leave that one to go to seed, can I use the seed?

1. Georgia sweets are Bonnies market name for the Hybrid Yellow Granex. It is a short day onion, typically grown in the winter here. Not suitable in the northern states.
2. once they bolt, quality is severly impacted. Best used as green onions.
