Garlic can be used this way up to a point though you'll not get bulbs. Normally, I'll do 3 or 4 cuttings and then let the rest grow out so that the plant can create enough reserves to still have a solid round to grow off of next year. Also, you could closely plant some garlic and then pull them to use as garlic scallions leaving more room for the others to grow larger.

How much green garlic can you use? I would just pull up som young ones and use it in cooking. Cuting the top will discourage bulbing. Initiallly you can plant garlics at half the spacing and then thin them as time goes by. This way you will have your young garlics and matured ones.
I cut my leeks tops and they grow back. It does not matter about leeks because you don't grow them for bulbs.

I wasn't wanting to grow garlic bulbs, but I have some garlic from the store that decided to sprout and the tiny green tops look very dark green and healthy, so I wondered about planting them to use for green tops.

I live in Cajun Country and use green onion tops in many things and thought if they would be good, garlic tops might be good, as well--Like in a nice dish of Crawfish Etouffee'. Yum. :)

We call them "gallions" when eaten at the green stage. When I have bad bulbs, I throw them in an area we've let garlic naturalize. This time of year, I can go out and dig a bunch of gallions if I need them for dinner.

Sprouting cloves grown in a container can be cut back several times for use sprinkling over this or that. It's a fun project.
