Cooking those green onion seed stalks...your uses?

Several of the Texas sweet onions have 36" seed stalks. I pulled the plants (bulbs only 1.5-2".) Used half of one seed stalk, including the ball of immature seeds, in a one egg omelet-delicious! Plan to slice and then puree rest of stalks in processor, saute briefly and freeze for use in 'Asian' marinade for grilling veggies-esp zucks and eggplant, meats or fish. The leaves are enjoyed in many dishes. Few compostables!
