This is my first year for shallots, as well. Mine fell over last week. I pulled them at the same time with the yellow granex onions that we grew because both had dropped. Look at the size of the bulbs - heck, my attitiude was that if they are decent pull them and start the drying process. Our shallots were fairly large and well developed and are on the drying screen right now.
I am no pro with shallots, but could see success with what had dropped already, so I pulled 'em.

I pulled the smallest bunch of shallots in my garden yesterday to check their progress, I think I am going to wait another week or two. Everything I have read states its good idea to wait until about 75% of the leaves have started to die back, to ensure the outside skin has cured which extends their storage time. I have grown shallots for two years an this years bunch is from the seed I saved last year. I planted both my garlic and shallots in the fall, even though winter is pretty rough around here, I mulched well and put them in a raised bed and they are doing well. . .
