You have asked an almost impossible question but I will give you an idea. I recently pulled some Shandong scapes and ate some on the spot, very spicy warm. then went down town to my favorite foo foo bar where I have previously given them some and tried a few with lamb. I was impressed.

I liked the scapes from my elephant garlic better than my hardnecks. They were nice and fat, and had a mild flavor. The scapes on the hardnecks got too tough and fibrous if I let them get too fat. They were also REALLY pungent when they got to that stage, though that may be because of my hot weather.
