alliums in the deep south?

Hi Folks,
Alliums are my favorite, but i have trouble growing any of them here except for regular ol' garden onions... i tried growing some giant globe alliums last summer, and then sent up shoots, but when it got warm, they just rotted away. I've also managed to grow chives here, but same thing, they died after one summer. The garden onions i plant in november and they bloom in may/june...i pull them out after they bloom...but don't know how to store them...i just sorta plant new ones each year.
