Walking Onions taking over, I'm so confused!

Hello! I am so happy to have finally found Garden Web! I always have so many random yet specific questions that I can never find answers for because only other gardeners would know... so now I can ask... hoooray! I have walking onions which are out of control! I have four, 3' x 6' raised veggie beds and my walking onions having taken over one of them. If I had a bunch of space it wouldn't be a big deal but I don't have much space at all :( The topsets seem to be mature and look like they would do just fine growing into new onions if I planted them so can I cut the tall stalks off and plant them where I want them now? Pull the full grown onion bulbs to use and use the bed to plant other things now? I haven't been able to find info that says specifically if walking onions are tasty year round or only certain times, do they get hot, bitter or woody like a regular onion does when it goes to seed? I sure would greatly appreciate the information. Thanks! Kay
