When they fall over it is time to pluck them out of the ground and dry them for three or four weeks in a dry place.

Plants use water pressure to keep their green parts erect. If you just transplanted them, the roots do not yet have an attachment to the soil and cannot take up moisture. To conserve moisture, the plant reduces water pressure in the leaves and the plant droops. Most non-woody plants do this when transplanted. Give it 2-4 days and you will probably see them perk up again.
