Yes, Store them like onions. I have used 'sets' from previous years plantings. Research storing onions and you will be on your way!

I must disagree with the previous post. If you plant seed-grown sets, they will probably bolt and have big flower stalks next year making them unsuitable for storage.

So, we will enjoy the harvest from this year and invest in some sets for spring planting 2012.

I've grown Ambition, too, and loved the first-year shallots from seed. They were still in deep dormancy in November, so I waited until early spring to plant them out. They grew well enough, but not as well as (1)new seedlings or (2)organic California-grown shallots from the coop, set out in early spring. The Ambition seed performed well the second year, but germination fell off in year 3. Hope this helps. I love shallots because they keep so well.
