Curing Onion Woes

every now and then, i will slice one of my mars red onions and i notice that an inner ring is in a state of spoiling. the rest of the onion may be fine, but there's this brownish ring inside.

is this due to a mistake when the onions are cured?

More likely it was a 'mistake' in harvesting. The higher the moisture content, the shorter the storage. Harvesting onions when the soil is moist leads to onions with more moisture than is desireable for optimal storage.

Having said that, stuff happens and harvesting when the soil has been dry for a while is easier said than done.
