What to do with 'forgotten' garlic

Last fall I planted garlic for the first time, a sampler package of hardneck varieties, in a raised bed using a sort of "square foot" planting pattern.

Apparently when I harvested my garlic this year I missed some of the bulbs (despite what I thought was a fairly thorough digging job), because around the beginning of September new garlic began sprouting in the bed!

Can I dig these later in the fall, after a few good hard frosts? Should I just keep them in the ground for next year? Are they a wash as far as producing edible garlic?

If you leave them in the ground they will certainly be edible next season, but because each clove tries to develop a new bulb, the crowding will cause the cloves to be much smaller next year.

Like hortster said, they won't produce nice big heads or cloves as they are now. However, alliums are very forgiving about getting transplanted. You should be able to dig them up, divide them into individual plants, and replant them and they will perform quite well.

You could also eat them like bunching onions in early spring before you need to worry about them bulbing up.
