I bought a cookbook years ago titled: " The Complete Garlic Lovers Cookbook from Gilroy, the garlic capital of the world". There are a number of good recipes in it (including pesto)but one of my favorites is a standard for us in summer when all the fresh produce in our garden is available; "Pasta ala Diane" 1 lb good quality Brie(double cream) 1/2 cup olive oil 1/2 to 1 cup fresh basil (depending on taste) 4 large cloves of fresh garlic miniced 5 large ripe garden tomatoes peeled, seeded and cubed 1/2 teaspoon salt 3/4 teaspoon pepper ********** 1 Lb Angel Hair Pasta 6 oz grated fresh Italian Parmesan cheese Peel rind and cube Brie cheese. Combine all ingredients except the last 2 (Pasta & Parm)and let sit at room temperature for 2 hours. Cook Pasta and toss with mixture sprinkling Parm cheese on top. Makes 4 servings |

| We just went to a Garlic and Harvest Festival a couple of Sundays ago....and one of my favorite things there was the deep fried garlic another item offered was a hamburger or Hot Dog smothered in the deep fried garlic!! We reproduced the experience at home in a tiny bit healthier way by pan frying the garlic(many ,many cloves of it), until golden and soft, in enough Extra Virgin Olive Oil to cover. Then we sprinkle on a tiny bit of Kosher salt as soon as the garlic came out of the oil. Finally we grilled up some burgers and put 6-7 golden cloves on each...heaven on a bun!! Oh Yeah...the garlic ice cream was pretty tastey too LOL!! |
