Harvest Cipollini Onions?

I still have red marble and Bianca Di Maggio cipollini onions outside in my raised bed. They look healthy from the top, but of the ones I've pulled recently, they feel soft and water logged.

I don't know if you can leave cipollini onions in the ground till spring and they will sprout/grow again, like garlic, or should I just harvest them and use them as green onions?

The ones in the picture are Bianca Di Maggio cipollini onions, the one on the right feels soft and looks waterlogged.
