Growing leeks from kitchen scraps

I read somewhere, probably here, that you can grow leeks from the root end if you don't toss them in the garbage. I potted up two a couple of weeks ago and they are sending up beautiful green foliage already. One of them has divided into two growing points, but still in the same bulb. There is no chance they will reach maturity before the first frost in VA, but I might get them to overwinter.

Has anyone else tried this? Did you like the results? Will these go straight to seed in 2015 or could I cut them again?
