Is elephant garlic really have a value for food.

I am wondering elephant garlic is have a value for use food same as garlic. I bought several elephant garlic and tryed to cook and ate. When I bake or steam elephant garlic, any time bitter. medium or rare ways are same bitter.I collected 5 different place and planted now. Still wondering all elephant garlics are bitter or sweet. Many people said send to flower garden.Is it right?

I don't have a lot of experience with it. I've heard that it is better after it is cured at least a few weeks. My interest in growing it is to see if the green plants are a good leek substitute (botanically it is a leek, not a garlic). I grew perlzwiebel last year which is also a perennial leek. The green leeks were good, but very small, while the bulbs were bitter and mealy.
