onions bolting

Here in So. Oregon we can either plant onions in the fall or in the early spring around February. To get store sized onions, I have been told that your only hope is to plant the previous fall.

The problem is that Oregon is known for having false springs. Meaning the weather really warms up in February for a week or two and then the temp usually goes way back down again until March.

If this happens the onions will bolt when the weather warms up during the real Spring. I want big onions, but I don't want a bunch of ruined bulbs if they bolt.

Is there something that can be done to keep them from bolting? Can you say, cover them in black plastic? or just cut the seed stalks off?
