A few questions for Digdirt

I have read DD's website with regards to Allium Growing but I may have missed some things about overwintering onions so I was wondering ....

In a post in the Vegetable forum you wrote :re Onoins,

"Down here we plant transplants in the late fall for next summer harvest and then start seeds for spring transplants in Dec. to transplant in February for fall harvest."

When do you generally start from seed and then when ( based on your first frost date ? ) do you transplant out to the beds in late fall ?

Do you ever have any of your transplants bolt in spring ?

What varieties overwinter and then produce best in your zone ?

When do they bulb - up and when are they generally ready to harvest ?

I thought that transplants in fall tended to bolt but sowing seed in fall they will not ? Maybe that is the difference between our zone and yours though.
