What varieties of Hippeastrum are we talking about? Most Hippeastrum hybrids are evergreen but have a semi-dormant state during winter while some completely lose their leaves during the winter months. If I were you I would not withhold water during the naturally important time for plants regarding the sun, water and warmth.

The size of the bulbs also are an aspect of the certain variety or hybrid as well, some plants have naturally smaller bulbs while some are quite large. If yours are blooming well, two times a year I would assume their growing enough leaves a year to provide bloom set.

thanks for the information, I'm sorry to say I only kept colors tags on the older ones but this explains the difference.
