You can keep them in a box. As you check them from time to time you will notice that some will start to develope growing points. I usually wait until I start to see root tips emerging as well before I pot mine up. If some are drying out too much I will pot them up but not water them until I see growth emerging from the soil.

I keep most of my smaller tubers in cardboard egg cartons. This helps to keep rot and disease from spreading. I number each compartment and keep a document file on my computer listing what is in each compartment.
