I've been experimenting with this for a couple of years now since I don't have the room to grow these indoors for the winter.

It depends on what varieties you have. Some do form hard tubers that can be stored dry for the winter. Some like Colocasia Illustris (Imperial Taro) have very thick roots. These I keep in their pots for winter, but let the foliage die back. If kept cool and on the dry side, the thick roots will survive and start growing again in the spring.

With other that I'm still not sure of, I potted up a few of the smaller pups and placed them in an aquarium with a single
compact flourescent light above them. I then covered the whole thing in plastic to keep in the heat and humidity. They basicly survived the winter this way and are now happily growing like crazy outside.

First though, you have to know what varieties you have.

Hey Kevin, I've also kept illustrus and black magic in the basement still in pots and without water and little light they did survive. So did African masque. They surprised me how quickly they started growing again once they were outside. It's too late tonight but I will make a list of all the varieties and post them tomorrow.Thanks for the response. That's how I kept my Illustrus. One year I kept it too moist and almost all of it rotted. I think a bit dry is better. I would also love to see your varieties. Maybe we can compare some notes about the best way to keep these over winter.
