Small seedling plants can have multiple stems . I had some small paeoniifolius growing super fast in the garden and some had several stems . pump them up with foliar feed

I had one do that. When the two smaller leaves are fully mature, pick them off (straight off the tuber) and put them in a glass of water. They should callus and grow roots- then you'll have 3 plants!
