Fresh Water Chestnut Preparation

One of the markets around here currently has fresh water chestnuts for sale. I know that you have to peel off the dark brown skin, but after that, how do you cook them?

fresh water chessnut can be eaten raw like a fruit or veggie. It tastes somewhat like jimaca. You can also slice or chop it and stir fry it after you peel them. Try not overcook them if you like it crunchy. Hm...I like eating them fresh..but it's such a pain peeling them.
