bokchoy seedlings stems pink!

Hi,

I seeded indoors 2 varieties of bokchoy: dwarf varieties from Kitazawa, white stem and green stem. The white seedling stems turned pink and were a bit stunted. The greenies did fine and are soon ready to harvest outdoors. But I was reading in the Victory Garden book that bokchoy doesn't usually like to be planted, so the next round I started in individual peapots and plug flats. (The others I did in a sterilized yogurt quart container, then transferred them to 3 inch peapots.)

They took off great but 2 weeks later, the stems of both varieties are turning pink and the cotyledons are yellowing and shriveling just as the the 2nd true leaves are appearing. I was going to leave them in their minipots but now I'm thinking they need space or some kind of help....

Help?
