RE: chocolate covered soybean

Just pick up a bag of toasted soybeans from your local grocer. They shouldn't be too hard to find.

Then melt your favorite chocolate in a double boiler or in your coffee maker. The higher the quality chocolate you use, the better they'll be (Valrhona, Cluizel, Callebaut) if you're a chocolate connoisseur. If you're leaning towards health, then you'll want the chocolate to contain 70% cocoa butter. But since toasted soy nuts are dry and salty, you may find that something like Hershey's milk chocolate may be the way to go to add a little moisture and sweetness.

If you can find a fine wire grid to lay the nuts on, you can just pour the chocolate over for individually coated nuts. Have wax paper or a silpat underneath the grid to catch the excess chocolate for easy clean-up. Or you could line a shallow pan with wax paper, pour your nuts out in a single layer on tha pan, and pour the chocolate evenly over them for a soy nut crunch bar.

Let us know what you try...
