I LOVE Pak choi!

This is the first year I've grown it, plus I put it in about five weeks ago, which is late but I've discovered after harvesting last night, that it is a wonderful vegetable!
I found a head with buds just barely forming, so that sucker was yanked and brought in for a chicken stir fry. I'm not sure why I waited so long to grow this, because it's perfect. The greens hold a lot of their volume and don't wilt down to nothing (like spinach) the ribs give a lot of texture and flavor to a dish, and I understand the greens are very high in calcium! The plants weren't bothered by any pests that the other cabbages have been struggling with, like birds, slugs, and aphids while they are planted in the same bed not more than 3 feet away from each other!
