collecting bok choy seeds....help please.

Last year my bok choy bolted and I waited for the seed pods to completely dry out before I removed the plants from the ground. I then collected the seed.

I planted earlier in spring this year but they still bolted quickly. The seed pods are green. I really want to pull the plants up and use the space now. Will the pods dry and seeds be viable if the plants are pulled up?

I have searched and cannot find the answer.

The seed pods at least need to start changing to yellow. Completely dry is the best way to insure seed viablity. But full grown seeds if dried properly should be ok. When the pods are green they have not not fully developed.
