Indian Spinach - amaranthus?

My neighbors are from India and gave me some greens she called Indian spinach. They look like some type of amaranthus. They grow 5 ft tall. I have some in my garden which are starting to set seeds.

They taste like hon choy (the one my mom grows).

What is the name of this? Thanks.

Can you post a pic? What color was it?

I'm growing various edible amaranth. There is green amaranth with I believe comes in 2 leaf types (round and pointy), white amaranth, red amaranth which is green and red and another type of red amaranth that is all red. But there are a lot of species of amaranth.
