Are all Amaranths edible?

I am growing Amaranth 'Elephant Head' and it produces black seeds.

I would like to eat the leaves as well as the seeds, but I have no idea if there is a difference between the black and cream colored seeds.

Can you eat the flower too? Any help would be much appreciated. Thanks!

It is edible but may not be the most palatable. There are many varieties grown for thier leaves, but this one is noted for its flower. There are also varieties grown for grain. Basic difference is yield.
