| I am growing Winged Bean (Psophocarpus tetragonolobus). According to literature I have read, the leaves can be used as a vegetable. Since some "edible" Asian greens require special treatment, I have been hesitant to try it. Has anyone here cooked the leaves?
My vines are lush, but may not seed for me here. Still crossing fingers, and watching buds form. Since I have a 24-foot row, I plan on eating _something_! :-) P.S., these are the day-neutral variety sold by ECHO. |

| Tender leaves around shoot tips are edible at the early stage of the plant growth. Cook it like spinach.I have herd that roots are edible too, but never tried. Hopefully plants will have pods and may bear the seeds if they are day neutral.Tender pods are edible.We stopped growing because they were overcroweding the garden. |
