Is there anyone familiar with this soup that might know of a good recipe for it? I have recently started experimenting with Annatto, & I think this soup uses it. Is there another spelling?

Could it be bun bo hue? If so, here is a link for a recipe using annatto oil. If you do a google search using bun bo hue annatto, you'll get more recipes.

You are right Rose Marie. I called a friend of mine late last night, & he told me Que was the South Vietnamese name, & Hue was a northern name, or something like that. It is a famous spicy beef noodle soup, named after the city of Hue (Vietnam) - known for its spicy cuisine. Anyway, thanks for the link & search tips – they guide me to exactly what I am searching for. I am trying to come up with a mainstream vegetarian version, which should be a challenge. That annatto oil sure does give a nice color & taste to soups – all without meat.
