Diakon Radish

I have grown "Hattorikun", a hybrid obtain from Kitazawa Seed Co. for two years now. Using the leaves for salads, stir frying. The plant was developed for the leaf, but I have a large diakon below having good structure and flavor.

Is anyone else growing this vegetable, and using the diakon. We have never prepared "pickles", but will try the vegetable as an addition to stir fry. Would like to know other's experiences. Thanks.

For a daikon salad, cut the daikon in julienne (small matchsticks). Marinate in a dressing made of rice vinegar, sugar and salt. Often, julienned carrot is included.

Daikon is also used in many soups, usually soups based on a clear broth. Here is one example.

I recommend Radish Cake which is a common dish for 'dim sum'.

It's also called 'turnip cake', both are the same in this context.
