I like them. In spring, you can collect large bunches of tender young tips in the woods. They taste not unlike asparagus but slightly tart. I eat them fresh but they can be cooked if desired, nice with some butter. The ones with a reddish tint tend to be bitter, I avoid them. Some people cook the roots.
