Good Time For Cuttings?

I'm going to visit a friend in the far west valley that has a dozen or so fruit trees (pomegranate, nectarines, apricots, figs, apple, and citrus). They have generously given me permission to take all the cuttings I want, which I'd like to root with rootone hormone or something.

Is this the right time of year to root cuttings when there are no leaves on the trees, or is it preferable to do that when the trees are growing vigorously in the spring and summer?
