my imperial star is a nightmare!!!

I bought an imperial star. The imperial star was in a pot that was way too small. The feeder roots knotted up in a big ball and the two tap roots curled around each other at the bottom of the pot . The imperial star starting getting flimsy. So I separated the taproots of the imperial star. But when I was separating the tap roots on the imperial star the curly part snapped of the tap root of one. The plant is still flimsy and sad. This is my second artichoke plant that's gone flimsy. The other one died I have no idea what's going on. I can't find a good spot for it. I put it in the sun but the plant likes to be under the porch in the shade its more responsive there. I can't find a good watering balance either. Its in a very large pot so I can move it around . In the summer I plan on putting it in my living room in front of a sunny window. Anyone know how to make an artichoke plant happy and healthy in AZ ? Or is this an impossible dream for me ?
