Thissime, that's always a problem in pickling around here. You might ask what to do on the harvest forum. I would think you could use dehydrated dill quite well, growing it earlier and than drying it.
I've used the dill heads/seeds since I let it bolt.if you shade it it will bolt in May-June, maybe later if you plant it late.
