Problems with spearmint

Hello everyone,

we live in Tempe, AZ and last year we decided we wanted to plant the whole side of our garden with spearmint. There are big trees there and the place is constantly shady, so the mint was not doing well.

We transplanted it to the center of the backyard (our house is facing west) and it did beautifully. The mint was healthy, sweet and incredibly fragrant. A little sprig was enough to make your iced-tea gorgeous!

This year, the mint looks different (woodier, with thicker leaves) and it is bitter and not fragrant... I added it in water for hours, like I did last year, and instead of making the pitcher fragrant, it made the water just taste off...

Any ideas? What happened?
